Lemon Delicious

With the glut of lemons we are having in our garden at the moment and our new chooks laying 5 eggs a day I've been looking for lots of different ways to use them. This has been a regular favourite in our household and it's easy to make:
Lemon Delicious Pudding
You will need:
2 eggs separated
1/2 cup sugar
5 Tablespoons of lemon juice (1 big lemon or 2 small ones)
3 Tablespoons of coconut flour (or whatever you have)
1 Tablespoon of lemon rind
1 cup of milk (we use raw cows milk)
1.5 Tablespoons of melted butter
* A tip to save on dishes: I mix the ingredients in the dish used to bake in, its round (20cm) and deep (5cm).
Instructions:
1) Mix flour and sugar
2) Add lemon juice + rind + small amount of milk (approx. 1-2 Tablespoons)
3) Mix in egg yolks and melted butter
4) In a separate bowl beat the egg whites
5) Fold the egg whites into the lemon mix
6) Put your dessert dish into a pan of water
7) Bake at 130-150 deg. C for 25-30minutes or until golden brown and firm.
8) Serve with plain greek or natural yoghurt or cream
