Carrot & Beetroot Salad

This fresh, colourful salad is great for boosting digestive enzyme activity and liver health. This yummy salad is a family favourite of ours and really is a meal in itself!

Carrot & Beetroot Salad 

You will need:
2 medium to large carrots - grated
2 medium beetroot - grated
2 tablespoons of parsley - chopped
1 orange - peeled, cut in half and sliced
1 handful of raisins or sultanas or chopped dates
1/2 cup of sprouted mung beans (great for cleaning your liver & skin)
1/2 cup of chopped nuts - almonds or walnuts are great
1/2 cup toasted long strand coconut

Mix all the ingredients together in a bowl and dress with orange vinaigrette.

Orange Vinaigrette:

You will need:
Juice of 2 oranges
Peel of 1/2 orange only if organic (optional)
1/2 cup of cold pressed virgin olive oil
1 tablespoon of honey
2 tablespoons of cider vinegar

Mix together in a jar and shake well. Pour generously over you liver loving Carrot & Beetroot Salad. 

Eat slowly and enjoy!
